What did you use to jailbreak?

I used redsnow and after installing one app from Cydia all native iphone apps (phone, phonebook, camera, etc.) disappeared completely and there was nothing even in the dock of my phone....

I reinstalled os 3.0 on my iphone and retried the jailbreak... same thing happened within 10 minutes...

any idea why?

I used redsn0w as well, with 2.1 and 3.0, and saw no ill effects. It sounds like there is an existing issue with your phone's file system that is manifesting when jailbroken. Try a full reset as guided here (don't be afraid to dry the DFU mode if the issue persists) and then try jailbreaking with redsn0w from another computer than you used the previous time.

I don't know anything about Slingbox and I'm not sure what you mean about the new OS (meaning 3.0) not being jailbroken yet. It was done weeks ago, and if you ever want to do a restore just follow the DFU mode instructions in the link I gave above.

As for tethering, check out PDANet via Cydia once your phone is jailbroken
