im willing to lose some SQ with just the one amp. but will it really be worse off?

then just run all your highs/mids off your head unit, and only run the sub off the amp

Running the front speakers and sub off a 4-channel would sound great. See, rear-speakers aren't important, so you can run them off the deck, but faded quiet so that you can hardly hear them.
