The parking brake switch has one yellow wire. When the brake is up that wire gets grounded, so you can install a 12V beeper and connect its + lead to ignition switched power and its - lead to that yellow wire.

Bridging the seatbelt and ebrake would be way more difficult than adding a motion based signal to the ebrake. If you want to experiment with a beeper, tie the - side to the yellow wire on the ebrake switch and the + side to the pink wire on the ignition switch connector.
