Yaris AUX, is it universal for Toyotas?
Would I be able to take the harness+jack and plug it into the second to most recent Corolla?

Universal for Toyotas? I doubt it, but I can't say for certain.
As for the harness+jack, I believe the jack will fit in that area by the steering wheel on the dash, but the stereo itself needs to have an auxiliary input; not all Toyota radios come with that feature stock.

As long as the radio-side connector matches it will work. Looking at pictures of Corolla radios on ebay I noticed that some do and some do not. This 06 one does (second connector from the left, looking at the rear of the radio in the picture in this ebay listing).
