I'm going to say a long travel custom coilover set up is your best bet. Try to find the member here who actually rally's his Yaris/Echo for more information on custom coilovers since he has had some made for his car.

x2. All of the off-the-shelf Yaris suspension systems I've seen are designed for on-road use.

^ keep in mind that the OP has said BOTH rally and DD.
It's also a double post.

Stock would work best for dirt and DD . From October to February 90 % of my driving (Yaris) is on dirt . I usually put my stock shocks and springs back on b/c they allow the Yaris to maintain its attitude (level) over rough terrain. The stock shocks will absorb more bumps and won't violently pitch the car and your kidneys won't take a beating as much . The best reason to use stocks is that there are plenty of slightly used shocks here on this site for cheap . I have 3 extra sets and none of the have more than 20 K miles ( One of my sets has less than 5 miles on them ) .
Personally if I were to RallyX , I would buy another set of shocks and all the components that go with it . ( top mounting plate ??? ($108 x2 ) , bumpstops , rubber boots etc. etc. ) .Pre assemble everything that way you could make changing shocks/springs a 15-20 min affair . Also if they are legal , I would check into some ATV tires ( Like CTScott ) . Garm you should try selling shocks this way . By that I mean already pre assembled . That way your customers would have an easier/faster time installing . Sure it would be more expensive , but they would not have to spend 30-60 mins compressing springs and transferring all the other components .

^ That's not a bad idea. With a UPS label so they could return the same parts from their cars when they are done.
