On the compression stroke, some of the compressed air/fuel mixture escapes pass the piston rings to the crankcase. That's called "blowby." The escaping gas (blowby) is forced up the oil drain channels in the block and forces oil and gas (blowby) out of the PCV, which is what the oil can is for. The oil can captures the oil and allows the gas (blowby) to go to the intake manifold.
