After doing some more research, it appears the OEM offset is +45, so I can see why my 16" rimd with +35 on 205/50/16 would rub. However, a 16x7 +45 would probably be okay with a 205/50/16, right or would I still have rubbing issues?

with a full 2 inch drop you may have some rubbing but I think you should be pretty much ok, best if you went say 195/45/16 or so, talk to some guys with lowered cars on 16 wheels, I believe largeorangefront is 1.7 drop with
+40 and 205/50/16 and walter was running 16's with little sidewall and more than a two inch drop

This is the info I have about OEM rim and tire sizes:

OEM 15x5.5, ET45, 185/60/15

OEM 16x6, ET51, 195/50/16

OEM 17x6.5, ET51, 205/45/17

I also assume that these are in stock height? now will lowering with the TRD springs 30 mm front and 30mm rear effect this?

most aftermarket wheels are going to be 7 inches wide and that changes things a bit even with the same offset, also tire width and profile and how low you go, all things would have to factored in, I think lowering on TRD springs with any offset within reason should be fine up to a 16 inch wheel, you are still going to have quite a gap there
