The rear only rubbed on the freeway (bumpy portions) with 3 passengers weighing a total of 675 lbs or so.

That looks like the height of my car with Eibach Pros (purchased from MI as well). I was going to put on Tanabe DF210's, but the front would have rubbed often.
I have 205/50/16s on 16x7s and my offset is enough in front that the tire and fender are flush (I don't understand which way the offset moves the wheel...is it higher number, the wheel is more inside the fender and viceversa?). My rears are just inside the fender and would work fine being lowered on DF210s.
